After much thought, I have decided to specialize in chocolate ganache and fondant cakes only. While I will still offer buttercream as a filling and buttercream cupcakes, I will no longer be making buttercream-only cakes. Over time, I have found myself creating fewer and fewer buttercream cakes, and I no longer feel that it is the best representation of my skills. Just as some bakers specialize in buttercream and others in hyperrealistic sculpted cakes, I want to focus on what I do best—fondant cakes with a chocolate ganache base. I understand that fondant cakes aren’t for everyone, but this change allows me to create designs with the level of precision and artistry that I am most passionate about.
To better accommodate the high demand for orders, a 50% deposit is required to secure your date. When my books open, I can offer a one-week grace period to allow time for gathering funds. However, after that week, if the deposit is not paid, the proposal will be voided and the date will become available for booking again. I will always do my best to work with you, but I also need to be fair to others who are ready to book. This policy helps me dedicate my time to confirmed orders without having to chase payments or hold dates indefinitely.
I am currently working on adding vegan and gluten-free options to my menu! However, since my kitchen is not a certified gluten-free environment, these items will be for those with gluten or vegan sensitivities, NOT for individuals with severe allergies. Your safety is my top priority, so I want to be fully transparent about this. I’ll be announcing the release of these new items in the coming months, so stay tuned!
To ensure I give each order the time and attention it deserves, I will continue opening my books in three-month increments for the foreseeable future. This allows me to manage my schedule efficiently while maintaining the quality you expect from Nat Just Cakes.
